There will be two locations in Spokane, and 15 restaurants in Seattle. The first locations will open as early as 2025, according to a statement from the company.
The company touts a no-antibiotics-ever reputation in their chicken operation. They bill themselves as a chef-driven, feel-good chicken chain with a high-tech customer experience.

"We're excited to introduce Starbird to Washington and share its chef-crafted menu and elevated guest experience with the communities we serve. This is more than just a business opportunity for us—it's about becoming part of a brand that's changing the way people think about fast food," said Vin Mehta, principal of Mehta Investment Group.
The Mehta investment group's deal is only Starbird's second-ever franchising deal.
